You’ll learn how to create your own signature craft FINE chocolate blends from tree to bar.
Chocolatier Training
You’ll transform your distinct craft chocolate blends into premium fine chocolate bars, truffles, ganache, mendiants, barks, and chocolate based nut spreads while pairing cacao with vibrant and healthy natural inclusions!
Sommelier skills
We teach you how to evaluate the quality of the cacao and perform flavor analysis while matching flavors to distinct regional chocolate origins.

GABRIELLE BREAULT
A professional Chocolate Maker and Certified Chocolate Sommelier, Gabrielle is committed to providing quality instruction in the art of fine chocolate making. Her fine chocolate bars have won five international awards and many commendations from the Academy of Chocolate in London England.
Gabrielle trained with world acclaimed Master Chocolatier Mark Tilling at Squires Culinary School in Farnham, England after attending her courses from the Chocolate Academy in Montreal. She has a Chocolate Taster Level 2 Certification from the International Institute of Chocolate and Cacao Tasting in London, England, as well having attended Ecole Chocolate’s Master Chocolate Program in Costa Rica.

Your course will be taught at Chateau Ardilleux, a peaceful retreat space enclosed within its own private parkland, and protected by stately walls. Located in the Poitou Charentes region of France which is known for its sunflowers and microclimate, and is also home to The Valley of monkeys, Remy Martin, Hennessy, and Green Venice with its miles of waterways. The local village boasts halls dating back to the 1600s, a picturesque lake, the ruins of an old castle and a rustic Romanesque church.
The property boasts the main chateau, with a separate charming cottage, a tennis court, indoor pool, restaurant, and ample serene space to walk and connect with nature,. It’s an ideal training setting with ample interesting local activity options during downtime.

The center is designed for reflective, peaceful inner experience of nature, birds and flora and fauna, and is a great place to complete your journey after your course. You can explore the stunning hikes and waterfalls of the nearby La Cangreja National Park.
